Located in the heart of Madrid, the restaurant occupies an elegant 1,600-square-meter building that for decades housed the city’s legendary Jockey. Today, from that very same address, we reinterpret its culinary heritage with a contemporary and refined perspective.

Distributed across two floors, Saddle embraces three distinct concepts: the Bar, the Main Dining Room, and four Private Rooms on the upper level. This configuration allows us to adapt naturally to different moments and needs —from a corporate lunch or product presentation to an intimate celebration or high-level business event.

The space unfolds through a meticulously designed interior architecture, where noble materials —wood, silk, and bronze— interact with natural light streaming through a striking central skylight. The indoor garden and an impressive suspended sculpture evoking a moving cloud add dynamism and character to a sophisticated, immersive atmosphere.

Our culinary philosophy is based on an unwavering respect for seasonal products, impeccable execution, and the perfect balance between precision and emotion, both in the kitchen and in service. We are built upon the foundations of the historic Jockey, an icon of Spanish fine dining in the 20th century and a true pioneer of its time.
That legacy, far from being a nostalgic reference, continues to inspire our vision and guide our philosophy, rooted in respect for tradition and a contemporary interpretation of excellence.

In our main dining room, we reinterpret great classical recipes with both rigor and sensitivity, integrating subtle nuances of nouvelle cuisine and discreet tributes to key figures in gastronomy.
This same philosophy extends to our liquid universe, with a wine cellar that houses extraordinary vintages, legendary spirits, and historic bottles, shaping a truly elevated oenological experience.
We also embrace the revival of tableside techniques from the grand restaurants of the last century, celebrating refined gestures and meticulous attention to detail.

In contrast to the tasting menu format that has dominated Spanish fine dining since the early 2000s, Saddle advocates a return to the à la carte experience.
This approach restores the guest’s protagonism and freedom of choice. With the option of ordering half portions, each diner can design their own culinary journey, tailored to every occasion and preference.

Seasonality is another cornerstone of our proposal.
We work exclusively with products at their peak of freshness and quality, renewing the menu once or twice each season and regularly introducing off-menu dishes.
This ensures a living, coherent cuisine, fully aligned with the natural rhythm of the kitchen and the passing of the seasons.

For those seeking a truly unique experience, Saddle offers the possibility of reserving its main dining room exclusively, featuring an open-view kitchen and the impeccable service that defines the restaurant.
It is an exceptional setting for private or corporate events, accommodating up to 84 guests for seated banquets and 150 guests for cocktail receptions.
The elegance of the space, its architectural harmony, and the attentive service of our team make every celebration an unforgettable experience.

Private Dining Rooms
We feature four exclusive private dining rooms, each named in subtle homage to the legacy and character that inspire Saddle’s identity.
These spaces are ideal for lunches, dinners, presentations, or business meetings, offering privacy, comfort, and personalized service.
Access is available from the ground floor via stairs or elevator, ensuring the utmost discretion.

Saddle is the only restaurant in Madrid that dedicates an entire floor exclusively to private dining, complete with a separate restroom and capacity for groups of two to twenty guests.
Each room provides an intimate and sophisticated environment, perfect for any special occasion.

Jockey
In tribute to the iconic restaurant that once occupied this very location, Jockey offers the perfect setting for executive meetings, business lunches, or private celebrations with an exclusive character.
Accommodating up to 10 guests in an imperial layout, it combines functionality and comfort with elegant furnishings —including a sofa and lounge table— creating a refined yet relaxed atmosphere for any occasion.

Ascot & Longchamp
Intimate and cozy spaces, ideal for up to four guests, offering views of the Ministry of the Interior.
Perfect for discreet meetings or small private gatherings, where privacy and comfort are paramount.

Zarzuela
An elegant room that can host up to 20 guests at an impressive imperial table, with the flexibility to divide the space into two independent private rooms using a movable panel.

At Saddle Bar, we find the perfect balance between sophistication and a relaxed atmosphere.
Rooted in the classics of mixology, our cocktail program reinterprets traditional recipes through contemporary techniques —always guided by what defines us most: hospitality as the essence of the experience.

Open continuously from 1:30 p.m. to 12:30 a.m., Saddle Bar offers the ideal setting to enjoy our signature cocktail list, where emblematic creations such as the Dry Martini with soufflé potatoes coexist with refined versions of timeless classics.
Each cocktail is crafted with precision, sensitivity, and absolute respect for the ingredient.
